
Gayle’s Banana Patties
It’s time again for another installment of Gayle’s Recipe Corner.
You know those meals or snacks that instantly transport you back to childhood—the ones tied to sweet memories of your mom baking and showing love through food?
For me, there are so many (many of which you’ve seen in this space), and Banana Patties are one of them. Every bite makes me feel calm, cared for, and deeply loved by the woman I was so blessed to call Mom.
I know the name might not sound all that enticing, but trust me—this is a wholesome, allergy-friendly recipe that’s been a lifesaver for me. Since I struggle to find premade protein bars that work for all my allergies, these have been a perfect solution. The best part? You can easily customize them!

Banana Patties (makes 2 patties, so I often double or triple the recipe)
1/2 cup Raisin Bran
1/4 cup uncooked oatmeal
3 packets of Stevia (you can use any artificial sweetener you prefer, but I’m allergic to all of them except Stevia)
1/3 cup non-fat dry milk
1 medium banana, peeled and mashed
1/2 teaspoon vanilla extract
(Other additions to consider: protein powder instead of the dry milk and for extra protein, peanut butter or sunflower seed butter, chopped almonds or walnuts, plain bran flakes, chocolate chips, cinnamon, and so many others!)
- Combine the first 4 ingredients in a bowl.
- Mash the banana in another bowl and add vanilla.
- Mix both bowls together.
- Shape into 2 patties.
- Place on a greased cookie sheet and cook at 350 for 20 minutes.
- Store in the refrigerator and eat within a week, as the banana will begin to spoil.
The general calorie count for the recipe as is is about 150 per patty and around 15 grams of protein. Of course adjusting it with your preferences will change that.
