Gayle’s Round Steak and Bacon

Did you know my mom wrote/compiled a cookbook when I was a kid? She sure did! Many of you have been around long enough to have one of those. But for those who don’t, I’ll be sharing some of those recipes and notes here so that you can try some of our favorites! And many of you know my Dad was also quite a chef so I may include some of his also. (Although there are some protected family secrets that I will keep!)๐Ÿ˜‰

Mom gave me my very own copy of her cookbook for my 19th birthday when I moved out of the house and into my own apartment. She had gone page by page and written notes to me like “Very good”, “Easy”, “Your Dad’s favorite”, etc. Now that she’s been gone 24 years, those notes are priceless to me. It’s so nice to open a book and hear her voice through her writing. I’m thankful.

So this recipe is one Mom made all the time, and she noted next to it “Impressive for company”. ๐Ÿฅฐ I’ve made it so many times as well. (Possibly for many of you!) So with the holidays coming up, this may be a great one to add to your list! Here’s her recipe for Round Steak and Bacon, and I’ve added some of my own notes over time so those are in pink.

 

Round Steak and Bacon (Serves 6-8)

1 lg. round steak
8-9 slices of bacon
salt and pepper to taste
4-5 T. minced instant onion (I prefer garlic salt, but you could use any steak seasonings you prefer)
1-2 T. oil
1 T. Worcestershire sauce

Slice steak into strips the width of bacon slices. Lay out each strip of bacon and place a steak strip on each slice of bacon. Sprinkle each with salt, pepper and onion flakes. Roll up each bacon and steak strip and secure with a toothpick; it will look like a pinwheel. (Note if you use a color toothpick, it will “stain” your meat.) Brown each piece in oil in skillet. When all are brown, add Worcestershire sauce. Cover and simmer until done. (Juice can be thickened for gravy and served with rice.)

This can also be done in a crock-pot โ€“ after browning each piece, place in pot for 5-6 hours. Itโ€™s really tender when done this way, and makes prep even easier.

  1. I have your momโ€™s book. Iโ€™ve made many of the recipes. Weโ€™re in assisted living now so I donโ€™t cook. I remember both your parents well. They were so sweet.
