High Protein Pancakes, Please!

Craving carbs but aiming for a high-protein diet? That’s me, almost all the time. Recently, I discovered this new High Protein Pancake Mix, and I’m hooked! What’s even better is a quick and easy microwave recipe I stumbled upon for those super busy mornings. Here’s what I did:

  • Spray a microwave safe bowl with cooking spray.
  • In that bowl, mix 1/3 cup of Birch Benders High Protein Pancake Mix and 1/3 cup of water.
  • Mix in some blueberries (or other berries).
  • Microwave for 90 seconds (you may want to try 60 seconds at first; microwaves are different).
  • Use a toothpick to test it.
  • Add a dollop of Greek Yogurt on top from some extra protein.
  • Top with some honey, if desired, and a few more blueberries.

This was very filling, fixed my carb craving, and didn’t leave that “pancake hangover”.
